Cannabal’s Basic Hillbilly Cider Recipe Part 1

This is a very simple, low effort recipe. The hardest part is all the waiting.

Equipment Used:
2L Mason Jar, with silicone venting plate, lid and holding ring
An out of the way place the jar can be left to ferment for a couple of weeks

Ingredients:
1.8L Apple Juice
1/2tsp bread yeast

Step 1: Cather all required equipment and sterilize the jar, vent plate and ring.

Step 2: Place 1/2tsp yeast into the mason jar

Step 3: slowly pour the applejuice into the mason jar, stopping to swirl the yeast mixture a few times to help exsure it is properly mixed. Fill the jar to the point where the shoulders curve up into the neck of the jar. You don’t want to go any higher than this, so there is space left in the jar for the bubbling.

 

Step 4: Secure the sterilized venting cap to the jar with a ring, label the jar with the recipe & date, and place it somewhere out of the way to ferment.
We’ll be checking up on it in about 24 hours, and giving the jar a swirl to wake up any yeast that are thinking about going dormant.

 
 

Step 5: After 24 hours the applejuice will start looking opaque, kinda like orange juice, and there should be a layer of bubbles forming in the neck of the jar.
Carefully give the jar a light swirl in order to draw up any yeast particles which may have come to rest on the bottom of the jar.

The jar now needs to sit and ferment for about 2 weeks. Come back and swirl the jar eveery day or 2 until bubbles are no longer being produced, at which point you let it rest so all the yeast can settle in the bottom of the jar. We’ll touch on that a bit more, in a future installment, when its actually a concern.
